We’re already planning for the spring season at Our Crafty Home. In addition to several new garden projects, we’re also planning a few Easter crafts. One of our ideas actually involved a wreath made out of real carrots…who knows if we’ll do it (we really don’t want those pesky squirrels to make off with it!), but just thinking about this wreath made us crave carrots. Instead of heading to the fridge and snacking on a few carrots, we decided to get carrot juice and make one of our favorite cocktails…a margarita! We found a delicious blend from Ralph & Charlie’s made with mango juice, which only added more goodness to the drink. We’re still celebrating the Arkansas Razorbacks’ victory at the Cotton Bowl last Friday night! So this weekend we’re dedicating our cocktail break to the Hogs by making the quintessential party cocktail…a Margarita. This also gives us an excuse to try out our brand-new cocktail glasses that our sister Ranae and our friend Hannah gave us for Christmas!
We call our margarita recipe the Skinny Rita because it’s low in calories — we don’t use a store-bought mix, which tends to be super loaded with sugar. We only add lime juice and artificial sweetener to the tequila and just a dash of Triple Sec. Today is one of those days that calls for a margarita…sunny, warm, and just the right amount of sticky humidity — the perfect summer day! Here’s a recipe that’s going to help you cool off while enjoying the sun!
Makes 2 cocktails
- 6 oz of Corzo tequila
- 6 oz can of pineapple juice
- 4 oz of diet ginger ale
- 1 tbs of fresh ginger pulp
- 1 lime
Mix all of the ingredients together, with the juice of half of the lime and stir well Serve over a tall glass of ice and garnish with the rest of the lime. Delicioso!
